Verde Cuisine Stuffed Green Peppers with Olive Oil

ingredients

 

1/2 cup of olive oil

2 onions

2 tablespoons of peanuts

1.5 cups of rice

10 medium bell peppers

2 glasses of hot water

1 medium tomato (to cover them)

1 tablespoon of currants

1 teaspoon salt

1 teaspoon of mint

1/2 teaspoon of granulated sugar

1/2 teaspoon of black pepper

1/2 teaspoon allspice

instructions

 

  1. Take half a glass of olive oil in a large rice pan and fry it with 2 chopped onions until it turns pink.
  2. Add 2 tablespoons of peanuts and continue roasting until it gets color.
  3. After the peanuts turn color, add 1.5 cups of washed rice and fry for 2-3 minutes.
  4. Add 1 tablespoon of currants, 1 teaspoon of salt, half a teaspoon of black pepper, half a teaspoon of allspice, half a teaspoon of granulated sugar and 1 teaspoon of mint and mix it for the last time.
  5. Add 2 glasses of hot water, cook for 7-8 minutes so that the rice remains fresh and remove from the stove.
  6. Fill the stuffing mortar you have prepared into approximately 10-15 bell peppers that you have removed the top cover and inside. Take care to leave swelling and cooking margins in the mouth parts.
  7. Arrange the stuffed vegetables you have prepared vertically in the pot.
  8. Cover the top of the peppers with two halved cherry tomatoes.
  9. Fill the pot halfway with water, pour olive oil on them and close the lid.
  10. Cook the stuffed on low heat for about 30-35 minutes until the cooking water runs out and the rice swells. Serve warm or cold.
